Nicole Guini
Nicole is a Chicago native with family roots in Argentina. She attended pastry school in Tucumán, Argentina In 2009, where she received her Certificate in Baking and Pastry from La Escuela Patagonica de Gastronomica.
After extensive work in bakeries, she moved to oversee Chef Sarah Grueneberg's pastry program at Spiaggia and Cafe Spiaggia. She then joined One Off Hospitality, as the Executive Pastry Chef at Michelin rated Blackbird, and it’s sister restaurant Avec, at which time she was awarded “Pastry Chef of the Year" at the Jean Banchet Awards in 2019. She opened Adalina as Executive Pastry Chef in 2021 alongside Chef Soo Ahn and joined WH Culinary in 2024 to to share her talents with both private clients and businesses alike.
Nicole enjoys travelling, reading, spending time with her two fur babies, and many many cups of coffee.
William Haskin
Consisting of over 20 years in the Culinary industry, and holding titles such as Director of Culinary Operations, Executive Chef, General Manager, Chef Instructor, and Grocery & Retail Manager, Will’s career is extensive. His experience includes work with Chefs Graham Elliot, CJ Jacobson, Thomas Boyce, and Tony Montuano, and companies such as Lettuce Entertain You, Hogsalt Hospitality, Eataly USA, and Levy Restaurants. Will holds a degree in Culinary Arts from Western Culinary Institute in Portland, OR.
With a passion for self-development, Will has extensive leadership and facilitation training through organizations such as The Mankind Project and Path to Spirit, and a desire to bring positive change to the world around him, in and out of business.
When he’s not in the kitchen, Will enjoys engaging in a variety of outdoor activities such as rock climbing, freediving, and distance hiking as well as creative endeavors like music, photography, and woodworking.
